Directions: Enjoy a cup of coffee, tea or your favorite morning beverage
- In a medium size bowl mix 3/4 cup of liquid: choose milk or water, 1 egg, 2 T. of vegetable oil and 1 t. vanilla.
- Gradually mix 1 cup of Grateful Ed's Buckwheat Buttermilk Pancake Mix to the wet ingredients. Let stand for 1 minute.
- Pour batter on lightly greased pre-heated skillet on medium heat and flip when ready...when bubbles appear or when your stomach grumbles, whichever comes first.
- Enjoy with warm maple syrup or your favorite fruit.
- If you are lucky enough to have leftovers, eat them later plain or with peanut butter. Yum!
Waffles are easily made by following the same directions, and both pancakes and waffles are great treats later in the day as leftovers.
Try topping off with:
- Warm pure maple syrup
- Apple butter
- Pumpkin butter
- Yogurt
- Chocolate chips
- Powdered sugar
- Honey
- Whip cream
- Fresh fruit
- Fruit syrups
- Jam
- Ground nut meal (pecans, walnuts)
Also try adding one extra egg and a teaspoon of nutmeg to the mix for an egg nog styled pancake or waffle.
Or add two whipped egg whites to the mix for a lighter mix.
